This coffee comes from the Apaneca Llamatapec region of El Salvador. The farm is owned by Oscar Schapps. The coffees are purchased in cherry and processed by our friend Ricardo Ariz at El Aguila. We buy two different experimental processes from them. This Typica, Bourbon varietal blend is fermented using anoxic fermentation, then semi washed or honeyed. We get notes of molasses, currant and key lime pie. Enjoy!
